Protein percentage is the first number buyers compare, but it is rarely the only one that decides the cost of a formulation. Fat, moisture, bulk density and microbiology all change how an ingredient behaves on the line.
Start with the inclusion rate you need, then ask for the specification range rather than a single lab result. A supplier who can hold a range across lots is more useful than one who sends a perfect sample from a single batch.
Ask for the certificate of analysis, the sampling method and the retained-sample policy. Those three documents tell you more about repeatability than a glossy brochure.
